Streusel French Roast


 

1/4 cup frozen egg product, thawed or 3 eggs slightly beaten
1    cup evaporated fat-free milk
3    tblsp sugar
2    tsp vanilla
1/2 tsp ground cinnamon
1    pinch of nutmeg
6    1 in sliced Italian bread
2/3 cup of crushed shredded wheat biscuit
1    tblsp of melted margarine or butter
2    cups of sliced strawberries
3    tblsp of sugar or sugar substitute equal to the 3 tblsps of sugar
1/2 tsp of ground cinnamon

In a medium bowl beat together the egg product or eggs, evaporated milk, 3 tblsp of sugar, vanilla, 1/2 tsp cinnamon, and nutmeg.  Spray a 2-quart baking dish with nonstick coating and on it arrange the bread slices.  Cover and chill from 2 to 24 hours, turning the bread slices once.

Combined the crushed biscuit and melted butter or margarine; sprinkle evenly over the bread slices.  Preheat the oven at 375 degrees and bake for about 30 minutes or until lightly browned.

While the oven is going, in a small bowl combine the strawberries, 3 tblsp sugar or sugar substitute and 1/2 tsp of cinnamon.  When your bread is ready, arrange your dish and serve.
